Organic extra virgin olive oil produced from traditional Tuscan olive varieties such as Leccino, Moraiolo, Pendolino and Frantoio. The olives are harvested and brought to the mill the same day where they are mechanically pressed in the latest generation of mills.
The oil is then filtered to prevent any residues from fermenting and spoiling the taste. It is clear with hints of yellow and greenish reflections, with a fruity aroma and hints of artichoke, grass and fresh almond. The taste is fresh and spicy with a bitter note that creates an elegant and harmonious structure.
Our organic extra virgin olive oil is the result of the pressing of 4 traditional Tuscan olive trees such as Frantoio, Leccino, Moraiolo and Pendolino hand-picked in the olive groves of our farm located in Chianti, in the valley of the Elsa river.
Our extra virgin olive oil is certified organic in compliance with the organic disciplinary of the production chain, from pruning to bottling directly on our property, a guarantee of the highest organoleptic qualities. The olives are brought to the mill twice a day and mechanically pressed to ensure that the organoleptic properties remain unaltered. Low acidity, abundance of polyphenols give our evoo characteristics of healthiness. Protected from light, frost and carefully preserved, it will preserve the flavors and aromas typical of our territory.
On the nose the oil has a fresh and clean olive scent. Strong but balanced, it has a fruity flavor with prevailing hints of artichoke, fresh almond and cut grass. The strong intensity, the spicy and slightly bitter sensations make Casa Pietraia organic extra virgin olive oil perfectly suitable for vegetables, legumes, soups, vinaigrettes.
